Rolo Cookies!

*I wrote this about 4 weeks ago, and I have not had a moment spare to load pictures to go with it. My world is currently slightly hectic. BUT as soon as I have photos, they will appear! Now, on to cookies!*

Rolo cookies! I know, they sound weird right? My sister pulled some funny faces when I described them. But being a new Pinterest advocate, when I came across these on the food boards, being both a cookie fan and a rolo fan, I figured I owed it to myself to at least give them a go. And wow was it worth it! Basically they're sugar cookies that you smush a rolo into the middle of.  I love them! And my mum? Well she took one while they were still warm, added a large dollop of whipped cream on top and devoured them. So they've gotta be good!

And my favourite bit? They're really really easy. Again it's a cups recipe, but I'm slowly in the process of figuring out an easy to use conversion chart. Having tried to find one online several times, and ending up with different amounts every time, I'm making my own. So I will update all the cups recipes once I have that done.

Rolo Cookies

Ingredients:
  • 2 1/2 cups plain flour
  • 1 tbs cocoa
  • 1 tsp baking soda
  • 1 cup caster sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 2 tsp vanilla
  • 2 eggs
  • Rolos
How To:

Preheat your oven to 170 degrees celcius. Line or grease your baking tray. 

Put both sugars, eggs, butter and vanilla into a bowl and beat until smooth.  Add the flour, baking soda and cocoa and beat until completely combined.

Flour your hands (trust me, makes things easier) and take a ball of dough - about golf ball size, maybe even a bit smaller - and squish a rolo into the centre. Make sure the rolo is covered completely, rolling the dough around your hands to form properly. Pop onto the baking tray and repeat.  These spread out quite a lot so I only put 6 to the tray.

Bake for 5-7 minutes. Remove from oven but let them sit on the tray for a couple of minutes. Then transfer to a wire rack and enjoy.

Suggestions:  As I mentioned, my mum coated hers in cream and said it was fab! I think a dollop of ice-cream would work well too. But they're really good just on their own too.
